Is it enough for the accused to create doubt, or must the accused prove the opposite conclusively?

In my ongoing cheque bounce case, the other side keeps saying the law automatically presumes I owed them money, and I want to understand if that is really true. Given this situation, I want to know: Is it enough for the accused to create doubt, or must the accused prove the opposite conclusively?
